Bacon Wrapped Air Fryer Pork Tenderloin

Cooking this pork tenderloin in the air fryer results in perfectly juicy, tender meat that's nicely flavored with fresh thyme and garlic. For ultra-crispy bacon on the exterior, make sure to use regular-cut bacon instead of thick-cut. If the tenderloin has tapered ends, tuck them under so it has an even thickness. While the pork rests, air-fry sliced vegetables and fennel to round out the meal.

Ingredients
  • 2 tablespoons olive oil
  • 2 tablespoons finely chopped fresh garlic (from 6 garlic cloves)
  • 1 ½ tablespoons chopped fresh thyme
  • 1 (1 1/2-lb.) pork tenderloin, at room temperature, trimmed and silver skin removed
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 5 to 6 (1-oz.) center-cut bacon slices
  • Cooking spray
Directions
  1. Stir together oil, garlic, and thyme in a small bowl. Rub mixture all over pork. Sprinkle pork all over with salt and pepper. Wrap bacon slices, overlapping slightly, around pork; secure using wooden picks.
  2. Preheat air fryer to 400°F for 10 minutes. Lightly coat fry basket with cooking spray. Add pork to basket, and cook until bacon fat has rendered and a thermometer inserted into thickest portion of pork registers 145°F, 20 to 24 minutes, turning pork halfway through cook time.
  3. Transfer pork to a carving board, and let rest 10 minutes. Remove and discard wooden picks. Slice pork, and serve.
