Caprese Skewers

Mozzarella stuffed rolls and bursting cherry tomatoes make this the best Caprese you’ve ever tasted!

Ingredients
  • 12 Rhodes White Dinner Rolls, dough thawed to room temperature
  • 8 oz low moisture mozzarella cheese, cut into 1/2 inch cubes
  • cherry tomatoes
  • fresh basil leaves
  • balsamic reduction (you can find this in the pasta aisle)
Directions
  1. Soak wooden skewers in water for 5-10 minutes to prevent burning on grill.
  2. Cut each roll in half. Wrap each roll half around each cube of cheese. Make sure the dough is sealed over the cheese.
  3. Alternate the items on the skewer: cheese stuffed roll, two grape tomatoes, then a leaf of basil, repeat.
  4. Grill on direct medium heat, closing the grill lid so the dough will cook through. Once the rolls are browned, remove the skewers from the grill.
  5. Drizzle with balsamic reduction to serve.
