Chickpea Salad Sandwich

An easy and delicious meat free meal. Just bake up some bread or rolls.

Ingredients
  • Rhodes White Dinner Rolls or Rhodes White Bread, baked according to package instructions
  • 1 15 ounce can chickpeas (rinsed and drained)
  • 1/4 cup roasted unsalted sunflower seeds
  • 3 Tbsp mayo, vegan if desired
  • 1/2 tsp dijon or spicy mustard
  • 1 Tbsp maple syrup
  • 1/4 cup chopped red onion
  • 2 Tbsp fresh dill, finely chopped
  • salt and pepper, to taste
Directions
  1. In a large bowl, mash chickpeas with a fork until they are textured and mashed to your liking.
  2. Add in the sunflower seeds, mayo, mustard, maple syrup, red onion, dill, and salt and pepper.
  3. Serve on sliced bread or on a Dinner Roll with whatever sandwich fixings you prefer.
