Grilled Cashew Chicken Wraps

Grilled rolls make the perfect wraps for a delicious summer meal.

Ingredients
  • 12 Rhodes Dinner Rolls, dough thawed to room temperature
  • 2-3 cups shredded cooked chicken
  • 1/2 cup mayonnaise
  • 1 Tablespoon rice vinegar
  • 2 teaspoons sugar
  • 1 Tablespoon sesame oil
  • 1 teaspoon Dijon mustard
  • 1/2 cup cashews
  • 1/2 cup sliced green onions
  • 1/2 cup mandarin oranges, divided
  • 1/2 cup finely chopped red cabbage
  • salt & pepper to taste
Directions
  1. Spray counter lightly with non-stick cooking spray. Combine 2 dinner rolls and roll into an 8-10 inch circle. Cover with plastic wrap and let rest for 10 minutes.
  2. Heat your grill or grill pan to medium heat.
  3. In a large bowl, combine remaining ingredients well.
  4. Remove wrap and cook on a grill or grill pan brushed with olive oil for about 1 minute each side. Remove from grill and cool slightly.
  5. Divide chicken mixture evenly between the wraps.
