Sweet Potato Chicken Noodle Soup
A classic chicken noodle soup with a Fall twist! With tender chunks of sweet potato, this is pure comfort in a bowl!
Ingredients
- 1 tablespoon olive oil
- 1 large sweet potato (about 1 1/2 pounds), peeled and cut in 1/2-inch chunks
- 3 cloves garlic, minced
- 1 onion, diced
- 1 tablespoon chopped fresh thyme leaves
- 1 tablespoon chopped fresh rosemary
- 4 cups chicken stock
- 2 bay leaves
- 1 pound boneless, skinless chicken thighs
- ½ cup ditalini pasta, uncooked
- 2 cups baby spinach
- 1 tablespoon freshly squeezed lemon juice
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh chives
