Taco Cups

These clever little Taco Cups make a great appetizer and kids will love them!

Ingredients
  • 12 Rhodes Dinner Rolls, dough thawed to room temperature
  • 1 pound extra lean ground beef
  • 1 packet taco seasoning
  • salt & pepper to taste
  • 1 cup grated cheddar cheese, divided
  • Salsa and sour cream, if desired
Directions
  1. Spray counter lightly with non-stick cooking spray. Flatten each roll into a 5-inch circle. Cover with plastic wrap and let rest.
  2. Brown ground beef in a skillet. Stir in taco seasoning. Heat through. Stir in 3/4 cup cheese.
  3. Remove wrap from dough circles. Evenly press a circle into each cup of a sprayed 12 cup muffin tin to cover bottom and sides. Divide beef mixture evenly and spoon over remaining cheese.
  4. Bake at 350 degrees F 25-30 minutes. Serve warm with sour cream and salsa if desired.
